My first time in Canada I ate potatoe skins and ever since, they've been my favorite appetizer! :chef

Rinse potatoes in warm water.

Boil potatoes until tender
- 3
Remove potatoes from boiling water and let them cool down

Once cool, scoop out the pulp from the potatoes with spoon.

Brush the inside of the potatoes with butter and place them in oven for 10 minutes.

Fill the potatoes with cheddar cheese and cooked bacon strip pieces.

Place them back in oven rack until desired crisp or cheese has melted

Remove from oven. Top with sour cream and fresh chopped chives.
