My husband loves pineapple so when I found this recipe I knew I had to make it. It has since become a family favorite and is requested for his birthday and Father's Day every year.

I found this recipe when I was looking for cream of coconut recipes. My family really liked it and it is easy to prepare. If you can’t find coconut cream pudding use vanilla.

My husband wanted to eat a summer-style cake, so I made one that suited his tastes by referring to a few different recipes I found in an American cooking magazine.The coconut will burn easily, so be careful. The coconut in the photo was burned slightly in Step 1. You can use plain yoghurt instead of sour cream. It will have a lighter finish. Drain the pineapple well before adding it. If you don't, the cake will have a sticky finish. Recipe by Mama Imani

To start, credit to Nigella Lawson, for reviving a dessert from Italian chef Gioacchino Scognamiglio, whose meringue gelato formed the basis for this dish. However, whereas theirs featured chocolate and a no-longer-available coffee liqueur, mine went in a decidedly more tropical direction: pineapple and coconut (with some chocolate kept in, because why not?). The result was a sweet, soft, not-quite-ice cream cake reminiscent of pina colada.

My favorite Banana pudding so far

Vanilla bean cake with peach filling in one layer and coconut-pineapple filling in another layer, iced with mascarpone cream, topped with strawberries and sprinkled with coconut chips.
