Ingredients

20 minutes
4 servings
  • 1 cuppumpkin purée
  • 2 Tablespoonscream
  • 1 cupVegetable stock(thick)
  • 2 clovesgarlic minced
  • 1 tablespoonbutter
  • 1/4th teaspoon mustard powder
  • 1/8 teaspoonnutmeg
  • 1/4 teaspoonred chilli powder
  • 1/2 teaspoonFreshly cracked black pepper
  • 1 teaspooncilantro for the garnish
  • 1/4th teaspoon chilli flakes for the garnish (optional)

Steps

20 minutes
  1. 1

    Heat butter in a pan, add minced garlic cloves and Sauté over medium-low heat for 1-2 minutes, or just until the garlic is soft and fragrant.

    Add the pumpkin purée and vegetable stock and stir well.

  3. 3

    Add the nutmeg, chilli powder and freshly cracked black pepper.

  4. 4

    Stir in the spices and let the sauce simmer over medium-low heat while stirring occasionally.

  5. 5

    Let it simmer for another 2 minutes so that it thickens.

  6. 6

    Now add cream and stir well.

  7. 7

    Taste the sauce and add seasoning if required.

  8. 8

    Finally garnish with chilli flakes and serve with chips, pasta or ravioli.
