Vegetarian Chilaquiles Omelette

This I made just because I wanted to make chilaquiles but I didn't have enough salsa to be able to actually make them and so, the my bright idea was to make an omelette version of the mexican dish. Mainly because I really wanted to eat mexican food and because I missed my mother's cooking and tried to replicate what my mother has made. I do not have the pictures but I will update this later once I make it again and also once I find corn tortillas...they are really hard to find in Japan so I am sorry for not having the pictures to help in the preparation.

Ingredients

  • 4Eggs (or less if you want)
  • 2-3Hot peppers (or as desired)
  • Salt (to taste)
  • Pepper (to taste)
  • 2Tortillas
  • Cheese
  • 2 Tsp.cooking oil (of any kind)
  • 3-4 Tbsp.salsa (or to your liking)

Steps

  1. 1

    Put pan on stove and add oil. Heat to medium and add the tortillas sliced (like if you are going to make tortilla chips).

  2. 2

    While that is being done batter the eggs and add peppers whole or chopped, salt and pepper.

  3. 3

    Once done add the battered eggs to the pan and let it sit until it looks ready enough to add the cheese and salsa. Start to fold to make the omelette. Enjoy!
