Heat a frying pan to medium heat, add oil and chicken and saute for 5-7 minutes each side until browned and cooked.

Add onions and peppers and saute a further 3-4 minutes.

Add sauce and turn heat up to bring to a simmer. Cook for 2-3 more minutes.

Garnish with chopped cilantro and peanuts and serve.

TIP: If sauce is too think, add a little water or stock. If you want it spicy, add crushed chilies. Serve Patak's Mango Chutney or Hot Lime Pickle as a condiment.
