heat the 1 teaspoon oil in skillet

stir pepper & onion cook until the onion has softened & turned translucent; about 5 minutes

increase heat to medium high & stir in chicken

cook and stir until chicken is no longer pink in the middle; about 10 minutes

stir in taco seasoning & water

simmer until liquid has evaporated, stirring occasionally; about 10 minutes

stir in the cheese then move from heat and set aside

lightly brush each tortilla with layer of salsa

spread about 2 tablespoon of chicken mixture in a line along bottom edge of tortillas

tightly roll them into cylinders and secure ends with 1 or 2 toothpicks

repeat with remaining tortillas

heat remaining oil in large skillet to 375

fry flautas in preheated oil no more than 4 at a time till gold and crisp; about 4 minutes

drain them on a paper towel lined plate

discard toothpicks

top finished flautas with remaining salsa
