Fry bacon until crispy and set aside.

Peel and cut potatoes into cubes.

Cook potatoes in bacon grease. Slice the onion thinly. Salt and pepper and cover.

When almost done, add well beaten eggs. Add a dash of water as they are beaten. Pour over potatoes and cover.

Stir up mixture and crumble bacon over the top.

Serve
