Line 2 x round baking trays (30cm)

In a large mixing bowl beat sugar and eggs until slightly thickened

dd sifted flour, milk, oil, baking power and vanilla essence. Beat for another minute. Just until batter is smooth and creamy. Don't overbeat

Pour batter into prepared pans

Bake for 30-40 mins or until tops are golden brown

For frosting

Beat 500ml cream with the strawberry jam until thick and forms peaks

Smooth this between the two cakes (which by now should be cool. If the cake has not cooled down properly the cream will melt

spread a thin layer of strawberry jam on top cake

beat remaining cream until thick and forms peaks

Frost whole cake with cream

decorate as you wish
