In large mixing bowl, combine pineapple, sour cream and dry pudding mix. Mix well. Then add in coconut(saving a couple TBSP for garnish), vanilla, and cool whip(also saving couple TBSP for garnish).

Pour mixture into pie crust. Spread remaining cool whip in a small design and garnish with remaining coconut.

Refrigerate for a couple hours until set up. Can also be frozen for a summer treat.
