Ingredients

4 servings
  1. 2 1/2 lbcubed into one and one half inch peeled butternut squash
  2. 1 tbspolive oil
  3. 1 1/2 tspdried herbes de provence
  4. 3/4 tspkosher salt
  5. 1/2 tspblack pepper
  6. 2 mediumonions, each cut into 8 wedges
  7. 1cooking spray

Cooking Instructions

  1. 1

    oven to 425

  2. 2

    place first 6 ingredients in a shallow roasting pan coated with cooking spray, toss well

  3. 3

    bake 30 minutes or til tender and lightly browned, stirring occasionally
