Ingredients

  • 175 gramsSelf Raising Flour
  • 60 gramsSoftened Butter
  • 150 gramsSugar
  • 2 mediumEggs
  • 100 mlMilk
  • 5 mlBaking Powder
  • 2 mlSalt
  • 30 mlLemon Juice ( 1 Lemon)
  • 15Fresh Blueberries
  • 15Walnut Pieces

Steps

    Preheat oven to gas mark 4 (180ºC / 350ºF )

  2. 2

    Mix together the sugar and butter

  3. 3

    Combine eggs with lemon juice and whisk until smooth before adding into the mixture. Grate lemon zest if desired.

  4. 4

    Sieve flour into mixture before adding salt and baking powder. Add milk whilst stiring until a smooth consistency.

  5. 5

    Finally add blueberries and walnuts as desired

  6. 6

    Butter up a baking tray before putting in the mixture and bake for 60 minutes
