Steps

Preheat oven to 350

Cut the potatoes into cubes (skin on or off, your choice, skin on is more of a healthier approach).

Oil the bottom of a glass pan, just barely enough to toss and coat the potatoes in.

Add potatoes to pan, mix around to lightly coat potatoes with the oil.

Add generous amount of oregano to potatoes.
- 6
Add salt, pepper and/or butter/margin for taste. (I don't add any of it for a healthier approach and with baking the potatoes, brings out their natural sweetness.)

Cook for 40-50 minutes, or until soft.
