Ingredients

30 mins
1 serving
  1. 1cod fillet (per person)
  2. 3 tbspextra virgin olive oil
  3. 1/4 tspfreshly ground black pepper (add more or less depending on your preference)
  4. 1/4 tspCayenne chilli pepper (optional)
  5. 1 pinchsalt

Steps

30 mins
  1. 1

    First cost the fish in 1 tablespoon of olive oil.

  2. 2

    Next sprinkle with salt, pepper and chilli.

  3. 3

    Preheat a non-stick frying pan, with the 2 tablespoons of olive oil.

  4. 4

    Skin face down first lower the fish into the pan.

  5. 5

    Fry for about 5-8 minutes.

  6. 6

    Gently turn the fish onto the other side.

  7. 7

    Fry for about 2-3 minutes on high.

  8. 8

    Remove some of the oil from the pan if there's too much oil.

  9. 9

    Turn it over back to its skin and cooking for a further 5-8 minutes or until skin has become crispy.

  10. 10

    Let it rest a few minutes before serving.
