Ingredients

30 mins
6 servings
  • 500 gramspenne pasta
  • 1 tbspolive oil
  • 1brown onion, chopped
  • 1red capsicum, diced
  • 200 gramsmushrooms, chopped
  • 3carrots, diced
  • 1zucchini, diced (optional)
  • 1 cupcorn kernels
  • 1 cupmilk
  • 1 cupgrated cheese
  • 1 tbspparsley flakes
  • 1Grated parmesan/mozarella cheese

Steps

30 mins
  1. 1

    Preheat oven to 180ºC.

  2. 2

    Saute onion, capsicum, carrot, zucchini and mushroom in oil until soft.

  3. 3

    Boil pasta until just tender.

  4. 4

    Add parsley and corn to vegetables and stir for another 2 minutes.

  5. 5

    Place pasta in casserole dish, sprinkle with Parmesan and stir.

  6. 6

    Add vegetables to casserole dish and stir.

  7. 7

    Pour milk over and top with grated cheese.

  8. 8

    Bake for approximately 20 minutes.
