  • 1Whole Chicken
  • 3 tbspButter
  • 1 bunchChives
  • 1 pinchSalt (to taste)
  • 1 pinchBlack pepper (to taste)
  • 1 1/2 cupCognac

Steps

  1. 1

    Place chicken in Pyrex

  2. 2

    Cut chives in fine stripes

  3. 3

    With butter at room temperature, mix with chives.

  4. 4

    Smear the butter/chives mixture between the chicken skin and meat.

  5. 5

    Salt and pepper chicken.

  6. 6

    Bathe chicken in cognac.

  7. 7

    Cook in oven for 45 to 50 minutes at 400ºF
