cook your bacon how you like it. softer works better. Set aside.

shave the top off of each muffin. toast. tops only or both sides, whatever floats your boat. If you wish butter the cut side.

cube a stick of butter and place a quarter to a third in a small saucepan, place over extremely low heat.

in your pan full of hot bacon fat, place four egg rings, drop a little butter in each ring. crack an egg into each ring. As soon as the whites are setting up add a couple of tablespoons of water to the pan and cover to stream the eggs done about 30 seconds to a minute. It's going to spatter. Be very careful.

juice the lemon into the saucepan containing the butter, separate the remaining egg. save the white for something else. Drop the yolk into the saucepan and whisk together. whisk in additional butter and a dash of cayenne. keep on adding your cubed stick of butter.

place two muffins on a plate. tear the bacon into bite sized pieces cover each muffin with two slices. Place the eggs on the pile. drown in the sauce. garnish with a few sprinkles of Cayenne or a load of paprika.
