1.prepare rice as directed on package. Let cool.

2. In large bowl mix rice, two cloves of minced garlic, bread crumbs, egg and cilantro if desired!

3. In blender blend tomatoes and juice with the chipotle peppers and cilantro also if desired!

4. In large skillet heat oil, add remaining garlic and onion! Sauté for about 2 min add cumin.

5. Add sauce 1c chicken broth and remaining cilantro and simmer on med low.

6. While sauce is simmering prepare meatballs! Mix all ingredients together and form into 1 inch balls, place on non stick cookie sheet and place in oven until slightly browned but not fully cooked.

Place meatballs into skillet at med temp and let simmer 30-45 min or until cookes thoroughly!

Enjoy(; you can also add green peppers or potato to the soup also or whatever you prefer
