This is something quick I whip up for me and my husband. Best part is it's healthy and it tastes good.
Quick potatoe and veggie skillet dinner
This is something quick I whip up for me and my husband. Best part is it's healthy and it tastes good.
Steps

Cube potatoes and place in large microwave safe bowl.

Season with salt, pepper, and rosemary.

Add oil and stir to coat.
- 4
Microwave until fork tender stirring every 3 minutes or so to prevent sticking.

Meanwhile peel and cut carrots into small pieces.
- 6
Place in another microwave safe bowl with a couple tablespoons of water. Just enough to steam the carrots.

Cover with plastic wrap and microwave approximately 5 minutes or until done.

Chop broccoli into bite size pieces.

Steam broccoli either on stove top or in microwave (follow same steps as carrots) until fork tender.

Add potatoes to a large skillet on medium low heat and saute for a few minutes stirring to prevent sticking.

Stir in carrots, meat, and broccoli.

Stir in Alfredo sauce to coat.

Sprinkle with shredded cheese and cover. Turn heat to low and allow cheese to melt.

Serve and enjoy!
