Peal and wash potatoes

Cut in half long way, then again in half. To where you have thick Wedges

On your cutting board Sprinkle Wedges with salt and pepper, toss

Pour oil in skillet. Enough to fill bottom of pan 1 1/2inches. Turn it up a little below Med high heat. When oils hot put potatoes in. Oil should cover about half way up potatoes.

Leave potatoes to get golden brown. Flip on each side till all sides are golden brown. You may need to adjust heat because all pans are different

Turn up higher at the end to get extra crispy. Take out and place on paper towels

Sprinkle with salt and serve right away
