Cheesy Ham and Potato Soup
Can take awhile to prepare but is worth the wait. Made more than I was expecting. Perfect way to use up my holiday ham bone.

Simmer leftover ham bone in pot for 2 hours.

Bake 8 potatoes in oven at 400°F for 1 hour.

In large pot, melt butter; add onions and sauté until soft.
- 4
Add flour and some chicken broth to make paste and stir until thick.
- 5
Add Velveeta cheese and sour cream.
- 6
Cube baked potatoes and add.
- 7
Cube ham and add.
- 8
Let soup simmer and eat when at desired warmth.
