Coriander leaves not only add aroma and colour to any dish , it is very nourishing and tasty. As the name suggests, bitter gourd is very bitter, although healthy, but coriander gravy made with tomatoes and curds offsets the bitterness.

Steps

Wash and Chop coriander leaves, bitter gourd and tomatoes.

Heat a non stick pan. Add panch phoran and bitter gourd. Fry for 5 minutes.

Grind together corianderleaves, tomatoes, chillies and ginger.
- 4
Add all the dry spices in bitter gourd and add ghee ground tomatoes and coriander puree.

Add curds and cook for 5 more minutes
- 6
Remove and sprinkle some more coriander leaves.
