been trying to create a make Ahead fried chicken recipe for quite some time now. some of the temps and times are due to the oven we use and the sheer size of the quarters we use. adjust times accordingly

been trying to create a make Ahead fried chicken recipe for quite some time now. some of the temps and times are due to the oven we use and the sheer size of the quarters we use. adjust times accordingly

pat dry chicken before seasoning, then

salt n pepper skin of quarters, next

cover with foil and bake chicken in oven @ 356* till 165* internal temp. this will take at least an hour

cool chicken in cooler over night

you will make one dry batter and one wet, wet should be very thin in consistency, it should resemble milk in consistency

don't season dry mix, season wet batter with lowerys to taste and pepper liberally. you want a fair amount of pepper. wet than dry. shake off excess dry batter

deep fry chicken at 350* - 365* till internal temp is 150*, takes roughly 7 - 10 mins for very large pieces
