Ingredients

  1. 3Shallots
  2. 3 cloveGarlic
  3. 3Scotch bonnet chillis
  4. 3Bay leaves
  5. 3Sprigs thyme
  6. 2Cloves
  7. 2 1/2Level tsp low sodium salt
  8. 3 tspHeaped, allspice
  9. 3 tspHoney
  10. 3 tbspEvoo
  11. 3 tbspVinegar
  12. 3 tbspDark rum
  13. 500 gramsPork medallions

Steps

  1. 1

    Add all ingredients for the jerk seasoning to a food processor and blitz

  2. 2

    Add pork (or other meat of your choice) to an airtight container

  3. 3

    Add the jerk seasoning to the pork and mix well.

  4. 4

    Marinade for 2 hours or overnight for a really intense flavour

  5. 5

    Cook in a griddle pan, basting continuously till pork thoroughly cooked, or this can be barbecued.
