So delicious. It has a hard shell cover but the soft chicken just adds too it.
Steps

start boiling your water and once it comes to a good boil add your 3 chicken thighs.

once you have placed the chicken into your water add your dashes of seasonings and stir.

Boil the chicken for an hour.

10 minutes before the chicken is done add your refried beans to another pot and add garlic salt then stir. (you could add any other seasonings to your beans if you want)

after your chicken and beans are done turn off both and start cutting your chicken. (you can cut your chicken any way)

before adding the chicken and beans to the tortillas get the tortillas a little soft so it could be able to roll up

start adding the beans and chicken to your tortilla (start from the top to the bottom)

now you are ready to fry your tortillas in hot grease.

after you are done frying let the oil drain out then add the enchilada sauce and cheese over the enchiladas.
