Ingredients

  1. 2 tbspOlive Oil
  2. 1large Onion
  3. 2 cupArborio Rice
  4. 1/2 cupWhite Wine
  5. 4 cupSquash (preferably Butternut Squash)
  6. 4 cupVegetable Broth
  7. 1/2 cupGrated Parmesan Cheese
  8. 1 tbspButter

  1. 1

    Start by sauteing the chopped onion

    Add the squash cook for about 2 min

    Now add the rice and brown it, stirring constantly so it doesn't burn, for almost 10 min.

    Add the wine and stir until it's absorbed by the rice

    Add 1 cup of the vegetable broth, and stir until it's absorbed by the rice.

    Keep adding broth and stirring until its absorbed for 20 minutes repeatedly: add broth, stir until it's absorbed, add more broth.

    2 minutes before the end, add the Parmesan cheese and stir. Add the butter, and stir. Remove from the stove, cover and serve it after 2 minutes.

Thanks so much for this recipe! I substituted the squash with sweet potato that I peeled and boiled. Used moscato wine and added some fresh ground nutmeg. Turned out beautiful.
