Ingredients

  1. 6 sliceboneless chicken breast halves
  2. 6 tbspbutter
  3. 4 clovegarlic minced
  4. 1 tbspitalian seasoning
  5. 1 lbfettuccini pasta
  6. 1 eachonion diced
  7. 8 ozsliced mushrooms
  8. 1/3 cupflour
  9. 1 tbspsalt
  10. 3/4 tspground white pepper
  11. 3 cupmilk
  12. 1 cuphalf-and-half
  13. 3/4 cupgrated, parmesan cheese
  14. 8 ozshredded colby monterey jack cheese
  15. 3 eachroma tomatoes, diced
  16. 1/2 cupsour cream

Steps

  1. 1

    combine chicken, 2 tablespoons butter, 2 cloves garlic, and Italian seasoning in large skillet over medium heat

  2. 2

    when chicken is no longer pink inside remove and set aside

  3. 3

    bring large pot of lightly salted water to a boil

  4. 4

    add pasta and cook for 8-10 minutes

  5. 5

    drain pasta when cooked

  6. 6

    meanwhile melt 4 tablespoons butter in the skillet

  7. 7

    saute onion, 2 cloves garlic, and mushrooms until onions transparent.

  8. 8

    stir in flour, salt, and pepper; cook for 2 minutes

  9. 9

    slowly add milk and half-and-half, stirring until smooth and creamy

  10. 10

    stir in Parmesan and Colby-Monterey jack cheeses; stir until cheese is melted

  11. 11

    stir in chicken mixture, tomatoes and sour cream

  12. 12

    serve over cooked Fettuccini
