Ingredients

  • 20 ozPackage pre shredded hash brown style potatoes
  • 2 eachLarge eggs lightly beaten
  • 4 tbspFlour
  • 1 smallSweet onion coarsely grated
  • 2 sliceDeli ham chopped into small bits about 1 cup
  • 1 cupShredded mozzarella cheese
  • 1/2 cupGrated Parmesan cheese
  • 1Salt and pepper to taste
  • 1 dozenEggs Scrambled
  • 1Chives for garnish

Steps

  1. 1

    Preheat oven to 400°F Fahrenheit

  2. 2

    Lightly spray a 12 cup muffin pan with non stick spray

  3. 3

    Mix the first 8 ingredients together in a large bowl ( everything except the scrambled eggs and garnish)

  4. 4

    Spoon potato mixture into each prepared muffin cup until about 1/3 full

  5. 5

    Gently press the potato mixture down in the middle and up the sides of each cup

  6. 6

    Bake until golden brown about 25 to 30 minutes

  7. 7

    If the nests have puffed up too much in the center, scooped out a little with a teaspoon. Spoon a few tablespoons of scrambled eggs into each nest and top with chives.
