  • 2 tbspolive oil
  • 1 largeonion
  • 2red peppers
  • 1orange pepper
  • 2 largecourgettes
  • 2 clovegarlic
  • 1 cantomatoes
  • 2 tspcaster sugar
  • 4eggs
  • 1salt and pepper

Steps

  1. 1

    stir fry onions

  2. 2

    add chopped peppers and courgettes

  3. 3

    stir in tomatoes sugar salt and pepper

  4. 4

    cook for 4hours

  5. 5

    hollow out the mix and add eggs and cook till eggs are done

  6. 6

    serve with pitta bread
