One of my favourite recipes handed down to me by my mother. It's a traditional hunter's pie from the Veluwe area of the Netherlands using local ingredients found in the forests and heaths of the area (mostly).
It is a hearty dish which will serve well during cold winter evenings.

Ingredients

  1. Meat
  2. 500 gramsbeef or venison
  3. Vegetables
  4. 1 kgpotatoes
  5. 500 gramsonions
  6. 125 gramsbutter
  7. 1 cupvinegar
  8. worcestershiresauce
  9. breadcrumbs
  10. applesauce
  11. Spices
  12. 2bayleaves
  13. 4whole cloves
  14. 5squashed juniper berries
  15. 1 pinchsalt
  16. 5crushed peppercorns

  1. 1

    Cook the meat: first brown on both sides, then add some water and the cup of vinegar together with the spices.

  2. 2

    After an hour of slow cooking add the onions. Leave it all stewing for an additional hour.

  3. 3

    Boil the potatoes well and mash them. Take the meat from the pan, cut it in small pieces and mash it with the potatoes. Add the onions and meat juice until it can stirred with ease. If necessary add some butter or milk, but this is often not necessary. Season when necessary with additional salt and/or Worcestershire sauce.

    Preheat the oven to 200C. Put the dish in an oven tray and cover it with breadcrumbs, add a few lumps of butter on top. Put it all in the oven until you get a golden brown crust

  5. 5

    Serve the dish with some applesauce on the side
