simple tasty breakfast idea for the little ones.
Cooking Instructions

preheat oven to 350
- 2
by hand, punch out large circular shapes from each bread slice, just boarder lining the crust without adding it.

place each circular bread slice in a muffin baking pan (1 slice per muffin)
- 4
crack each egg and add 1 egg ontop each bread slice
- 5
dice up your 1/2 tomato and drizzle an even amount on each egg
- 6
add a jalanepo slice to each, as desired. (I made 2 without jalapeno for my son)

sprinkle salt, pepper and basil as desired.

bake for 15-18 mins, depending on how runny you like your eggs, the longer baking the less runny they'll be

let stand for a few minutes, then you can easily scoop your pop ups out with a spoon. Enjoy! :)

I got the idea for this recipe from Neiman Marcus's recipe book. I used the original recipe many times, then adapted it to my own no-fail recipe by adjusting the flour ratio. At restaurants, they bring the popovers to your table hot and freshly baked. At home, I serve them with my homemade mango butter.
