  1. 1 candiced tomatoes
  2. 1purple onion
  3. 2Celery Celery stalks
  4. 1 1/2 boxMushrooms
  5. 1 cantomato sauce
  6. 1 cantomato paste
  7. 3Carrots
  8. 3 cloveGarlic
  9. 2 tbspChilli powder
  10. 1 tspcumin
  11. 1 tspsea salt
  12. 1 dashblack pepper
  13. 1Green pepper
  14. 1red pepper
  15. 4 cupkidney beans
  16. 1 tbspolive oil
  17. 1 1/2 cupQuinoa
  18. 1 dashparmigian cheese
  19. 1 tspOregano

Steps

1 hour
  1. 1

    Chop all vegetables

  2. 2

    Cook drain an cool Quinoa

  3. 3

    Heat frying pan to medium heat

  4. 4

    once hot add the mushrooms and peppers and garlic

  5. 5

    half way through cooking add the onions

  6. 6

    Cook until mushrooms have cooked through

  7. 7

    Add the rest of the ingredients and simmer on low to medium heat for 1 hour

  8. 8

    sprinkle with cheese and serve
