wash potatoes, wrap in tin foil and bake at 400° for 1 hour

let cool. Cut potatoes in half, scoop out pulp and set aside. Discard skins, melt butter in kettle over low heat and add flour

cook 1 minute stirring constantly. Gradually add milk, stirring constantly until thick and bubbly. Add potato pulp, salt, pepper, 2 table spoons of green onion, 1/2 cup of bacon and 1 cup of cheese. cook until thoroughly heated: stir in sour cream and heat through. serve with remaining green onions, bacon and cheese as garnish.
