Steps

Wash zucchinni under running water. Trim off both ends of the zucchinni

With larger side of grater, grate all the zucchinnis

Add salt into the zuchhinni in a bowl and set aside for 10 minutes. After 10 minutes place the zuchinni in clean kitchen cloth and wringe out all the water

Chop spring onions and add lightly beaten egg

Mix the egg and spring onions until well combined

In another bowl, add flour, pinch of salt, baking powder and black pepper, whisk to combine

Add the flour mixture into the egg zucchinni mixture and combine well

Use a large spoon to scoop out the zucchini paste, drop onto a non stick pan, press to make it flat

Cook the first side until golden brown. Flip the zucchinni fritter

Cook second side until golden brown

Remove fdom heat and place on kitchen towel to drain off excess oil

You can eat the zucchinni fritters on their own or have with a tzatziki dip
