Rajas con crema, chicken, and cream cheese

Cook the onions in 2 tablespoons of butter until they are translucent, then add the poblano pepper strips (already roasted, peeled, and sliced).

Once the edges of the peppers are translucent, add the shredded chicken and the rest of the butter. Stir until well combined.

Add the corn kernels.

Once everything is well mixed, add the cream cheese and heavy cream.

Note: Add as much cheese as you like. If you don't like cream cheese, you can substitute with Manchego cheese.
