Ingredients

  • 9 ozpoblano peppers, seeded, cleaned, and cut into strips (about 250 grams)
  • 1medium white onion, sliced into half-moons
  • 1cooked chicken breast, shredded
  • 1 cupcorn kernels (about 6.5 oz or 180 grams)
  • 1 cupheavy cream (about 1 cup or 250 ml)
  • 1/3 cupspreadable cream cheese (about 3.5 oz or 95 grams)
  • 3 1/2 tablespoonsunsalted butter (about 1.75 oz or 50 grams)

Steps

  1. 1

    Cook the onions in 2 tablespoons of butter until they are translucent, then add the poblano pepper strips (already roasted, peeled, and sliced).

    Once the edges of the peppers are translucent, add the shredded chicken and the rest of the butter. Stir until well combined.

    Add the corn kernels.

    Once everything is well mixed, add the cream cheese and heavy cream.

    Note: Add as much cheese as you like. If you don't like cream cheese, you can substitute with Manchego cheese.
