Hing aaloo dum is a traditional Bengali cuisine
Steps

Heat oil and saute the Potatoes adding salt and turmeric powder

Remove as the Potatoes get golden brown

Add oil temper Cumin seeds,bay leaf and asafoetida

Add ginger paste saute for a while

Now add Cumin powder and saute

Add tomato puree saute adding salt and turmeric powder

Add Potatoes mix well with the masalas

Add red chilli powder and cover till everything is mixed

Finally add sugar and slitted green chilli

Serve with roti,rice or paratha
