Batatache Bhujne(pathare prabhu style)

Pathare Prabhus, along with Kolis, were one of the first people to inhibit the island group now known as Mumbai. Due to several reasons, some historical and some gastronomical, Pathare Prabhu cuisine got developed independent of the typical Maharashtrian, Malvani, Konkani and Goan-Portuguese cuisines, which have a great influence on modern Maharashtrian cuisine.

Steps
- 1
If you have chopped the potatoes first, make sure you soak them in water to avoid oxidation
- 2
Place the chopped onions in a large bowl and add the green chillies and dry spices to it
- 3
Add the ginger garlic paste and chopped potatoes and mix well
- 4
Keep the marinated potatoes for 5-7 minutes untouched
- 5
Heat oil and add the potatoes and salt to taste
- 6
Sauté for 2-3 minutes and add adequate water for the potatoes to cook
- 7
Bring to a boil and boil then reduce heat and cook covered until the potatoes soften
- 8
Once done, add chopped coriander leaves
- 9
Mix well and take off heat
- 10
Serve warm with rice-Daal/rotis/paranthas,etc. Bon Apetit!
- 11
My tip: batatachya bhujne is a dry gravy. But you can make this according to your preference in consistency
- 12
My tip: if you do not prefer a very spicy curry, avoid green chillies completely
