Ingredients

2 servings

1/2 cupBoiled black eyed beans
1/2 cupsweet corn
1medium sized onion finely chopped
1tomato finely chopped
1/4 cupcucumber cut into diced
1/2 tspmint leaves chopped
to tasteSalt and black pepper
1 tspmixed herbs or to taste
1lemon juice
1 tbspmayonnaise

In a bowl add beans,corn,onion,tomato, cucumber and mint leaves..Mix gently.

Squeeze lemon juice.Sprinkle salt, black pepper and mixed herbs.Add mayo.And mix.

Serve cool.
