Italian Chinese-Garlic Mushrooms

Fusion food is that where you merge different cuisines to make another and here I have brought Italian Chinese-Garlic Mushrooms served in Mexican tortillas on one plate. I have this fascination for mushrooms since childhood when I first saw pictures in Alice in Wonderland or the Pixies sitting on toadstools as they were called. The first time I got to eat them was not a pleasant experience but then taste has to be cultivated. Mushrooms are nothing but edible fungi and have many health benefits. They contain a lot of fiber and are full of water.

The mushrooms we get here are quite grubby and I don’t like to just wipe and use them. I sprinkle a little flour and corn flour on them and keep aside for 10 minutes. Then I rinse them nicely and they are clean and white.

Cooking for one can be tedious at the same time very interesting. I cook only when I am in the mood but I always love to cook when my family is around or friends.

I cooked the mushrooms in Olive oil and sprinkled dry Italian herbs like Parsley, Thyme, Oregano and in soya sauce and chilli sauce I mixed 1 tbsp corn flour to thicken the curry and I made cones with tortillas and served these Italian Chinese-Garlic Mushrooms in them.

Ingredients

20 minutes
4 servings
  • 200 gramsbutton mushrooms,
  • 1 tspgarlic,
  • 1 tspmixed dried herbs
  • 1/2 teaspoonblack pepper powder
  • 1 tablespoonolive oil
  • 1 tspsoy sauce
  • 1 tspchilli sauce
  • 1/4th tsp chilli flakes
  • 1 tspvinegar
  • 1 tbspCornflour
  • as neededSpring onion greens
  • 2 tbspwater
  • 1small onion,
  • to tasteSalt

Steps

    Sprinkle some corn flour on the mushrooms and keep aside for 10mins. Then rinse the mushrooms well to remove all the dirt. Drain and keep aside.

    Heat olive oil in a pan, add garlic and sauté. Add the chopped onion and sauté them till translucent. Do not let the garlic brown.

    Now add the chopped mushrooms. Sauté the mushrooms till the shrink in size.

    Add the mixed herbs and salt. Mix well.

    Once the mushrooms are well browned it means they are cooked.

    Add the vinegar. In a bowl take the soya and chilli sauce with the cornflour and mix all three with water.

    Add this to the mushrooms and stir well so that you get a thick gravy that coats the mushrooms well.

    Garnish with spring onion greens and turn off the gas.

    Serve these mushrooms with roti bread or rolled in tortillas.

    I made cones with tortillas and served these Italian Chinese-Garlic Mushrooms in them.

    To make cones- Just roll the tortilla or roti and keep it in shape by using cloves.

    Any which way you serve these Italian Chinese-Garlic Mushrooms are delectable.
