In a large bowl cream the butter and sugars together until smooth. Scrape down the sides of the bowl, if needed.

Add in pudding, eggs, additional egg yolk, vanilla. Beat for about one minute on medium speed.

In a separate bowl, sift flour, baking powder and salt.

Gradually add flour mixture to Butter fixture until totally combined
- 5
Process the butterscotch sweets to coarse chips and work into dough
- 6
Wrap dough ball in cling wrap and rest in the fridge for at least two hours.

Take dough out about a half hour before you need to bake. Just makes the dough a little softer and easier to work with.

Preheat oven at 170c

Prepare baking trays by lining with baking paper and spray to grease

Pitch off pieces of dough (large enough to roll) lightly roll out and cut or stamp with you favourite shape.

Place cut cookies on you pre prepared baking tray and bake for about 20 minutes (depending on your oven)

Cool and enjoy
