Ingredients

4 servings
  1. 8-10medium ripe tomatoes
  2. 2carrots chopped
  3. 1/2 inchginger
  4. 1small beetroot
  5. 4 clovesgarlic
  6. 1 teaspoonsalt
  7. 2bay leaves
  8. 1 teaspoonblended fresh green chillies
  9. 1/2Sugar or to taste (optional)
  10. 1/4th teaspoon black pepper powder
  11. 2 tablespoonscoriander leaves chopped

Steps

25 minutes
  1. 1

    Wash and chop all the vegetables and boil thoroughly in a pressure cooker.

  2. 2

    Strain the liquid after opening the cooker.

  3. 3

    Once the vegetables have cooled down, using a blender, blend the pulp until it looks like a smooth juice.

  4. 4

    Allow this mixture to simmer and in the salt, sugar and chillies and finely chopped coriander to the mixture.

  5. 5

    Also add a bay leaf or two.

  6. 6

    Allow this to simmer for 10 minutes or until you get the aroma and right thickness of the soup.

  7. 7

    The coriander makes the soup taste extra nice and refreshing.

  8. 8

    Serve the soup hot with some toasted bread or soup sticks.
