Tom Kha Gai (Thai Coconut Chicken Soup)

Add half of the coconut milk and the chicken to a pot.

Bring to a boil, then add salt and a pinch of MSG (optional).

Add the galangal and lemongrass.

Once it comes to a boil again, add the remaining coconut milk, lime juice, and vegetables. Taste and adjust seasoning as needed, then turn off the heat and serve.
