Clove Jollof Rice

Wash your rice thoroughly and parboil it

Meanwhile grind your capsicum, scotch bonnet and tomato into a fine paste. Grind your ginger, clove and garlic

Wash the vegetables thoroughly and cut to small pieces

Pour cooking oil in a pot, add onion and fry for 2 mins then add the tomato paste, fry for 5 mins then add your garlic, clove and ginger. Add a little amount of water then add your vegetables and allow it to cook for 5mins. Add water and allow it to boil. When the water start boiling, you add your parboiled rice and allow it cook.

You can garnish with coleslaw, salad or any sauce of your choice
