#FMC-Well as they say necessity is the mother of invention my cake also has a similar story to tell...Being a mother to a super active 9year old foodie calls for lot of kitchen experiments which are tasty and healthy .However I am a person superchallenged in terms of patience and can't spend lot of time in the kitchen following elaborate procedure.I.almist tweek all the recipes and make it easy peasy.
So one Sunday evening out of ziffy thought of making carrots cakes.Once the grating was done thought why not to add some dates which anyway doesn't have any takers at home.Then come oats .One thing followed another and I have put almost all the ingredients I felt healthy to go into a cake sans oil.
End result.This flavor bomb.My kid was not able to lay her hands off.Even my husband enjoyed it.Shared it with my friends and nobody could believe that this cake was so unconventional yet so tasty.
This is a super healthy cake which both Children and Adults can savour guiltfree. This Christmas why don't you try this cake and let me know what magic flavor bomb did to you.Have a good time this Christmas and New year.

Ingredients

  1. 100 gmsOats
  2. 50 gmsSemolina
  3. 50 gmsWheat flour
  4. 50 gmsVanilla custard powder
  5. 50 gmsDeseeded soft chopped dates
  6. 100 gmsfreshly grated red winter carrots
  7. 100 gmspowdered jaggery
  8. 200 mlMilk
  9. 50 gmsnuts and raisins(optional)
  10. TeaspoonBaking Soda and Baking powder each

Steps

    Powder oats and Jaggery separately in a mixture grinder

  2. 2

    2)Transfer it to a big dry bowl.To this sieve the wheat flour,custard powder,baking powder and baking soda

  3. 3

    3)Add the deseeded dates,carrots and dry fruits to it and mix it well

  4. 4

    4)Now add milk and use the cut fold method to mix it till it reaches batter consistency..Neither too thick nor too runny

  5. 5

    5)Preheat the oven for 10 min in 180°.In the meanwhile line a cake tin with parchment paper and pour the batter.Tap the pan properly to release any air.

    6)Put the tin in the oven in middle rack and bake for 40 min.Once done you can check with a toothpick if it's coming clean.Else bake for 10 additional minutes.

    Take the cake out of the oven and let it cool completely...Once it cools just make thick slices and serve your kids with Vanilla custard or let them dunk it in their regular warm milk and enjoy.it
