Ingredients

  1. 600 gmsall purpose flour
  2. 5ripe banana
  3. 6eggs
  4. 1 cuplemon juice
  5. 1 tablespoonlemon rind
  6. 250 gmssugar
  7. I cup cooking oil
  8. 1 teaspoonginger
  9. 1 teaspooncloves
  10. 1/4 cupraisins (optional)
  11. 3 teaspoonsbaking powder
  12. 1/4 teaspoonsalt
  13. 2 teaspoonsvanilla essence

Steps

  1. 1

    In a bowl sieve the flour, salt, cloves and ginger and set it aside

    In another bowl mash the ripe bananas and set aside

    In a separate bowl mix the eggs, cooking oil, vanilla essence, sugar and lemon rind

    Using a mixer or whisk mix them

    Add in the mashed bananas and beat

    Fold in the flour mixture alternating with lemon juice. Funally fold in the raisins

    Pour the batter in two well greased loaf tins and bake at 170°C for 45- 50 mins or until a skewers comes out clean when inserted in the cake
