This is a staple food of Bengalis that is generally served as a tea-time snack or during the lunch with some steamed rice. It has a lot of nutritional benefits along with a remarkable taste and a crunchy crust from outside.

Heat some oil in a wok.

In a bowl add all the ingredients except the pumpkin Flower and oil. Mix them well with your hand.

Add some water and make a thick paste. You may add more besan if required.

Add 1 teaspoon of the heated mustard oil from your wok. This catalyses the crunchiness of the fritters.

Dip the pumpkin flowers in the batter and deep fry them in the wok.

At first, simmer the flame and let it cook from inside from both sides.

After 5min, increase the flame to maximum and fry them till golden brown in colour.

Remove it from the flame and serve hot.
