Ingredients

  • 3med to lg over-ripe bananas
  • 1 1/2 cupsflour
  • 1/4 cupvegetable oil
  • 1egg
  • 3/4 cupssugar
  • 1 tbsground cinnamon
  • 1 1/2 tspbaking powder
  • 1/4 tspbaking soda
  • 4whole shelled walnuts, crushed

Steps

  1. 1

    Preheat oven to 350° and grease loaf baking dish

  2. 2

    Peel bananas and place in large mixing bowl. Mash bananas using a fork until smooth.

  3. 3

    Add remaining ingredients and whisk together until well-combined

  4. 4

    Spoon into greased baking dish and place in oven for 50-55 minutes.

  5. 5

    Remove from oven and let sit for 10 minutes in baking dish.

  6. 6

    Using a butter knife, run the knife along all sides to loosen from baking dish. Turn dish upside down on a cooling rack and let cool for at least 20 minutes.

Its the cinnamon. Not so secret but I am a huge cinnamon fan so I figured it would go nicely with bananas. It does.
