Ingredients

Serves 4 servings
  • 1 lb (2 oz)pumpkin (about 500 grams)
  • 1 lb (2 oz)savoy cabbage (about 500 grams)
  • 1onion
  • 4 1/4 cupsvegetable broth (1 liter)
  • Extra virgin olive oil

Steps

    Prepare the vegetable broth and set it aside. Sauté the onion in a pot until it becomes translucent.

    Add the pumpkin and savoy cabbage. Stir for a few minutes, then add the vegetable broth.

    Let it cook for about 20 minutes, then serve the soup hot. If you like, top with grated Parmesan cheese.
