Fried Eggs
with fresh juice

Break eggs, add a dash of salt and whisk, once you are done, set aside

Heat up frying pan and add vegetable oil, once the oil is hot, start frying yam, once its cook through and abit crispy, remove and place in an oil drainer; do same for the plantain and drain inside a paper towel

Once you are done frying the yam and plantain, reduce oil from the frying pan and leave at least 2tbs worth in the frying pan

Add onions, tomatoes and pepper, then stir for about 3mins, add a dash of salt and stock cube if you wish.

Pour whisked eggs into the frying pan and scramble tills the eggs and tomatoes is thoroughly mixed up and the egg is fried and serve with bread
