Steps

Clean and soak rice for 30 minutes. Incase Gobind Bhog is not available, use Basmati rice

Heat milk in a pan over low medium heat. Stir occasionally and bring to boil

Simmer and cook for 8-10 minutes further over low heat. Milk will start reducing
- 4
Add cardamom powder and bay leaf. Mix well
- 5
Drain excess water from rice and add to milk. Mix well
- 6
Cook over low heat until rice is done. You can mash up the cooked rice further. Milk would have thickened by now. Switch off

Add nuts, raisins and mix well. Rest on Kitchen counter for 3 minutes

Add Nolen Gur in parts and mix well until well dissolved in Payesh
- 9
Serve warm or chilled as desired
