Ingredients

  • 1 can (15.5 oz)Black beans
  • 1 can (10 oz)diced tomatoes with chilies
  • 1 cancorn, drained
  • 1 pkg (1 oz)chipotle taco seasoning
  • 1jalapeno pepper, diced
  • 1 tbspoil
  • 1/4onion, diced
  • 1glove minced garlic
  • 76" corn tortillas

  1. 1

    In a skillet add the oil. When hot add the corn, pepper and onion till corn is lightly browned

  2. 2

    Add the rest of the ingredients and cook until heated through, about 5 minutes, being careful not to mash the beans

  3. 3

    Finally serve on warmed corn tortillas with a squeeze of lime. Serve with chopped onions, cilantro, shredded lettuce, diced tomatoes, cotija or favorite shredded cheese, sour cream, salsa, any toppings that you like. Serve with a side of Mexican rice
